Coconut Sauteed Green Asparagus

This lightly sweet, ethnic stir-fry features sautéed asparagus and shrimp in coconut milk. The bright green asparagus and rich red shrimp create a visually appealing dish.(ingredients for 2 servings)

Veggie Maria Frozen Green Asparagus 10
Frozen shrimps 6
Coconut milk 100 ml
Ginger (minced) 1/2 clove
Garlic (minced) 1/2 clove
Salt 1/3 teaspoon
Salad oil 1 tablespoon
Pepper To taste

Preparation

  • Cut the frozen green asparagus into thirds. Thaw the frozen shrimp under running water.
  • Heat salad oil in a frying pan over medium heat, add the garlic and ginger, and once aromatic, fry the shrimp.
  • Once the color changes, add green asparagus to Step 2 and continue stir-frying.
  • Add the coconut milk and season with salt and pepper. Bring to a boil and then remove from the heat.
