Sweet Potato and Mixed Beans Glacer

This is a high-fiber mixed bean and sweet potato deli-style hot salad. The slightly sweet and tender sweet potatoes and beans make for a delightful side dish that kids will love. It’s also delicious when served cold, so you can make a lot and store it in the refrigerator for the next day’s bento lunch. (Ingredients for two people)
Veggie Maria Mixed Beans | 150g |
Sweet Potato | 100g |
A Butter | 5g |
A Sugar | Tsp 1 |
A Salt | A pinch |
A Water | 50ml |
Mint | Appropriate amount |
Preparation
- Wash the sweet potato and slice it into about 5mm thick rounds.
- In a pot, combine step 1's sweet potato and Ingredients A. Bring to a boil over medium heat, then cover and simmer for 5 minutes on low heat.
- Add frozen mixed beans and simmer for another 5 minutes on low heat. Then, remove the lid and increase the heat to evaporate the moisture. Serve in a bowl and top with mint.
